Cheesy Quinoa Bites, OH YEA!

I found this recipe on the sea of Pinterest posts.  The author was so emphatic about their deliciousness, I couldn't wait to try them.

These bites are one of THE best snacks that I have tried lately. They have almost no fat, are full of protein and veggies, and are basically guilt-free! I actually had them for dinner tonight.

The author says dip them in a sauce, but they don't need it. They taste Asian to me, so we put a spot of srirachi hot sauce on them.
  • If you don't like cilantro, leave it out and make these anyway (you could add parsley, or more onion or cheese.) 
  • If you are eating gluten-free, leave out the flour (I accidentally left it out on the first batch and the bites were slightly more fragile but didn't miss the flour.) 
  • If you want low-fat, use egg beaters (or whites) instead of whole eggs.
I upped the oven temp a bit and got them pretty crunchy, oh yea! The second batch I made, I patted into balls before putting in the mini-muffin pan--crunchy on the outside, moist on the inside.


Cheesy Quinoa Bites 
Makes 24 bites 
  • 2 cups cooked quinoa (cooled)
  • 2 large eggs (or 1/2 cup Egg Beaters)
  • 1 cup shredded carrot 
  • 2 stalks green onion, diced 
  • 2 cloves garlic, minced 
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup grated Parmesan cheese 
  • 2 T. all-purpose flour 
  • 1/2 tsp. seasoning salt 
  • 1/4 tsp. freshly ground pepper 

  1. Preheat oven to 350 degrees. 
  2. Liberally spray a mini-muffin tin
  3. Mix together quinoa, carrot, egg, green onion, garlic, cilantro, cheese, flour, salt and pepper. 
  4. Distribute mixture into a greased muffin tin, filling each cup to the top (1 heaping Tbs each.)
  5. Bake for 15-20 minutes or until golden brown and sizzling.
  6. Use a spoon to gently remove the bites from the pan.  Cool on a paper towel on a cooling rack.  Serve warm or room temperature, with our without a dipping sauce. 

I haven't yet checked the exact WW points, but author says there are 130 calories in 4 bites. Make up a double batch and have them on hand to rescue you when you gotta have a bite. Enjoy!
